lasagna soup

found this recipe in family fun, feb '09 issue, and did a little bit of tweaking.  forgot to take a picture (lame, i know!)  it turned out ok, and i'll probably make it again.  i wouldn't put it in the "super-special" category, but it was pretty quick - and easy.

here's my take on the recipe:

1 lb ground beef
4 t minced garlic
2 t dried oregano
1/2 t red pepper flakes
2 T tomato paste
28 oz can diced tomatoes
6 c chicken broth
8 oz fusilli pasta
1/2 c chopped fresh basil
ricotta cheese
parmesan cheese
mozzarella cheese

brown beef, and drain.  add spices, and saute 1 min.  add tomato paste, and saute until a rusty brown - about 5 min.  add tomatoes w/ their juice, and the broth.  bring to a boil, then reduce heat but keep bubbling for 15 min.  add pasta, then increase heat to boiling again for the amount of time recommended on pasta package.  stir in basil.  to serve, put 1 T ricotta in each bowl, and top with parmesan and then mozzarella.  ladle soup on top.

  1. That actually sounds very good! You know what's lame??? My oldest daughter wanting lasagna, and this mom buying frozen lasagna. ;-) I might seriously have to try this recipe...thanks for sharing.
